Healthy nutritious light meal. Serve immediately with fresh, crusty bread.
1 Head of romaine lettuce, cut into ½ inch wide strips or torn into small pieces
1 cup sliced cucumber
½ cup Peloponnese Kalamata Olives Pitted
½ cup sliced Peloponnese Flame Roasted Sweet Peppers
½ cup (leftover) cooked chicken, in cubes
½ thinly sliced red onion
1 large tomato, cut into wedges
½ cup (or to taste) lemon-olive oil vinaigrette
½ cup crumbled Greek feta cheese
1 tablespoon Peloponnese Wild Capers, drained
In a large bowl, combine first 6 ingredients and toss. Add dressing and tomato wedges and toss gently to cover. Sprinkle with crumbled feta cheese and Wild Capers. Serves 4–6 as a side salad or 2 as a light meal.
