Fruited Couscous and Ham Salad


½ cup diced dried apricots

1 cup diced ham

1 apple cored and diced

4 green onions sliced

½ cup frozen apple juice concentrate thawed

1 cup dry couscous

½ cup Peloponnese Flame Roasted Sweet Peppers chopped


Prepare couscous according to package directions, adding apricots; cover. Refrigerate 1 hour.

In large bowl, toss together couscous and remaining ingredients.

Serve salad on lettuce leaves, if desired.
