1 medium yellow onion, cut into thin wedges
1 3½-ounce package pepperoni, cut into quarters
2 roma tomatoes, chopped
2 ounces feta cheese, crumbled
6 (9-inch) burrito-size flour tortillas, heated
1 teaspoon light olive oil
2 Peloponnese Flame Roasted Sweet Peppers sliced
¼ cup Peloponnese Kalamata Pitted Olives, cut into quarters
Heat oven to 350°F.
In skillet, heat oil over medium-high heat; add onion. Sauté 3 minutes or until softened.
Remove from heat.
Stir pepperoni, roasted peppers, tomatoes, olives and cheese into skillet.
Season with salt and black pepper.
Divide pepperoni mixture evenly among warm tortillas; fold gently. Place seam-side-down on baking sheet. Bake 10–15 minutes or until lightly browned and heated thoroughly.
